Nordic Cooking offers classes, healthy meal options

A business opening is always something to celebrate, even more so during the ongoing pandemic. 
 
Last year, Clements Ferry area resident Lousie Rakers was busy planning to open her business, Nordic Cooking. Before moving to the area, Raking was traveling and studying what other cultures eat and how they nourish their ecosystems for their family as well as the environment.
 
When the coronavirus hit, Rakers took a leap of faith and tweaked her business model.  
 
“When I started my business in the beginning of March, the full implications of COVID had not yet been realized, so it was a matter of adapting and reacting to the new environment due to the pandemic. The way I dealt with that was to offer curbside delivery of gluten-free vegan cakes and sourdough bread in place of the classes and events I had planned on offering,” she explained. 
 
Rakers now offers weekend meal boxes with safe non-contact delivery, vegan gluten-free cakes, cooking and gluten-free baking classes, and plant based catering. All meals are packed in containers that are biodegradable and reusable. Despite COVID-19 concerns, she has consistently sold out meal deliveries and cooking classes.
 
“I want to show people that plant-based food can be delicious, satisfying, and vibrant. It is also important for me to show that plant-based food can not only be enjoyable, but will also make the body happy while being good for the environment,” Rakers said.
 
 Daniel Island resident Carolina Wells was looking for a chef to make a vegan wedding cake for her daughter’s wedding and found Rakers on Facebook. 
 
“Due to COVID-19 our daughter’s wedding celebration was very intimate and Louise was just the perfect person for the job. From the moment we met Louise we fell in love with her… My daughter and I just recently took a baking class with her and loved every minute of it. It was just five of us which allowed us to keep proper social distance,” said Wells.
 
Anne Jensen is a fan of Raker’s weekend meal boxes. “We have had various box delivery subscriptions, but never really loved them. With Louise, the quality of the ingredients are fantastic. Recipes are inventive and make eating plant-based [meals] enjoyable for the whole family. We love supporting local businesses... with Louise you get fantastic quality and service with a local touch. We would much rather support a business like that than some corporate conglomerate.”
 
Lowcountry local Heather Hollifield loves using the weekend meal delivery.
 
“Last week our oldest son was visiting from California, and he has a gluten-free, vegan diet. Louise delivered the most delicious vegan and gluten-free meal for him, and he didn’t feel left out as the rest of us ate Martin’s BBQ.”
 
Daniel Island resident Dr. Michele Duffy says eating well is important for a robust immune system. “Louise’s background in holistic health and nutrition shows in every detail of her business. Her knowledge of how food can be used as medicine, and still taste amazing, is perfect for this pandemic/flu season.”
